Ingredients

  • 1 lb. boneless pork cubes
  • 1 tbs. oil
  • 2 cup chicken broth
  • 1 tsp. chili powder
  • 1 tsp. oregano
  • 1/2 cup onion, diced
  • 1 1/2 tsp. ground cumin
  • 1 can whole corn, drained
  • 1 can black beans, drained
  • 1 can kidney beans, undrained
  • 1 can (4oz) diced green chilies

Step 1

Heat oil over medium high heat in large pot. Add pork & onion; cook 5 minutes stirring often. Add remaining ingredients; mix well. If too thick, add more chicken broth to taste. Bring to boil, reduce heat to medium & cook 30 minutes. Makes about 6 servings.
