Ingredients
- Crust:
- 1 1/2 cups flour
- 3/4 cups softened butter
- 1/2 cups powdered sugar
- For the Filling:
- 1 1/2 cups sugar
- 3 eggs, beaten
- 3 tbsp flour
- 3/4 tsp baking powder
- 5 tbsp lemon juice
- Grated rind of 1 lemon
- For the dusting:
- 1/4 cup powdered sugar

Step 1
Preheat the oven to 350
Make the crust by mixing 1 1/2 cups flour, the butter, and 1/2 cup powdered sugar together, and press onto bottom of greased 9 x 13 pan. Bake for 30 minutes.
While the crust is baking, mix together the granulated sugar, the eggs, 3 tbsp flour, baking powder, lemon juice and rind, combine thoroughly. Remove baked crust from oven, pour lemon mixture over it, and return to oven and bake 25 minutes longer. While still warm sprinkle with the 1/4 cup powdered sugar, let cool slightly, cut into bars and remove from pan.
