Chicken-Buffalo Chicken and Potatoes

Ingredients

  • 1 C ranch or blue cheese dressing
  • 1 1/4 lb of boneless skinless chicken breasts cut into 1" strips
  • 1/3 C buffalo wing sauce
  • 6 C frozen (thawed) southern style hash brown potatoes
  • 1/2 C shredded cheddar cheese
  • 1 can of condensed cream of celery
  • 1/2 C corn flake crumbs
  • 2 TBsp butter or margarine melted
  • 1/4 C chopped green onion

Preparation

Step 1

Heat oven to 350-Spray 9x13" 3 qt baking dish w/cooking spray. In a med. bowl stir chicken strips and wing sauce together. In a large bowl mix potatoes, dressing, cheese, and soup. Spoon into baking dish. Place chicken strips in single layer over potatoes. In small bowl stir together butter and corn flake crumbs-sprinkle over in baking dish. Bake 30 min. covered-uncover and bake 20-25 min. longer or until potatoes are tender, and chicken is no longer pink. Sprinkle with green onions.
