Ingredients
- 3 cups flour
- 1 cup sugar
- 3 tsp baking powder
- 3/4 tsp salt
- 1 egg
- 1 1/2 cups milk
- 3/4 tsp vanilla extract
- 1/4 tsp almond extract
- 1 cup flaked coconut, toasted
Preparation
Step 1
1. In a large bowl, combine flour, sugar, baking powder and salt. Combine the egg, milk and extracts. Stir into dry ingredients just until moistened. Fold in coconut.
2. Pour into a sprayed 9x5" loaf pan. Bake at 350F for 40-50 mins or until a toothpick comes out clean. Cool for 10 mins before removing from pan to a wire rack. Brush butter on all sides and on top.
