Ingredients
- 1 egg yolk
- 1 Tbl Dijon Mustard
- 1 Tbl each grapefruit, lemon and orange juice
- 1/4 cup olive oil
- 1 Tbl finely chopped shallot
- 1 pinch of fresh thyme leaves
- salt and pepper

Preparation
Step 1
1. Place yolk in a stainless steel bowl along with 1 Tbl water.
2. Place a bowl over a pot of simmering water and whisk yolk until warm and frothy.
3. Add mustard, whisk.
4. Add juice, whisk.
5. Gradually whisk in olive oil.
6. Add shallots and thyme.
7. Season to taste with salt and pepper.
