  • 1/4 cup sugar
  • 1 pouch (0.5 g) vanillin powder
  • pinch salt
  • 1 cup pecan halves, finely chopped
  • 1/2 cup icing sugar

Step 1

Combine butter with flour, sugar, vanillin powder and salt in a large bowl. Rub together with finger tips until no large pieces of butter remain and the mixture resembles coarse meal. Add the pecans and mix together with hands. Press the dough into a large ball. Scoop out 1-tablespoon portions of dough, roll into balls and place on a baking tray. Chill for 6 hours or overnight until balls are solid. Preheat oven to 300F. Line a baking sheet with parchment paper. Place cookies on tray 1" apart. Bake in the center of the oven for 35-40 minutes or until firm to the touch and bottom edges are golden. Let cool on the tray for 5 minutes. Remove to a rack to cool. Repeat with remaining cookies. Roll cooled cookies in icing sugar.
