  • 1/4 CUP APPLESAUCE
  • 2 TBSP FRESHLY SQUEEZED LEMON JUICE
  • 1/2 TSP VANILLA EXTRACT.
  • 1/2 CUP POWDERED SUGAR

Step 1

PREHEAT OVEN TO 350 LINE BAKING SHEETS WITH PARCHMENT

IN SMALL BOWL COMBINE FLOUR, BAKING POWDER AND SALT AND SET ASIDE

IN STAND MIXER WITH PADDLE ATTACHMENT BEAT TOGETHER SUGAR, LEMON ZEST

AND COCONUT OIL ON MEDIUM SPEED UNTIL LIGHT AND FLUFFY. IT IS IMPORTANT

THAT COCONUT OIL IS SOLID / NOT LIQUID. ADD APPLESAUCE, LEMON JUICE, AND

VANILLA SCRAPING SIDES AS NECESSARY. MIX UNTIL FULLY COMBINED. TURN SPEED

TO LOW AND SLOWLY ADD DRY INGREDIENTS. ONCE ALL FLOUR IS ADDED, TURN UP

TO MEDIUM SPEED AND MIX UNTIL JUST COMBINES / DON'T OVERMIX.

PLACE POWDERED SUGAR IN BOWL PUT TBSP SIZE BALL IN POWDERED SUGAR TO

COAT AND PLACE ON BAKING SHEET. BAKE 10-12 MINUTES UNTIL EDGES ARE FIRM.

COOKIES WILL BE LIGHT IN COLOR AND LOOK UNDERDONE. STORE IN AIRTIGHT

CONTAINER.
