Chimichurri Steak Kebabs

Ingredients

  • 1 cup cilantro - very finely chopped
  • 1/4 cup garlic - minced
  • 1/4 cup white vinegar
  • 1/2 cup olive oil
  • red pepper flakes - to taste
  • 1 teaspoon of cumin
  • 1 teaspoon of dried oregano
  • salt and black pepper - to taste
  • 1 lb steak - cut in 1.5 inch cubes
  • 1 red onion - cubed
  • 1 red pepper - cubed
  • whole garlic cloves (one for each kebab)
  • wooden skewers

Preparation

Step 1

Preheat oven to 375 degrees. Soak wooden skeweres in water. In a food processor, combine cilantro, garlic, white vinegar, olive oil, red pepper flakes, cumin, dried oregano, salt and black pepper to make chimichurri sauce. If you don't have food processor, just cut up garlic and cilantro more finely and combine everything in a bowl. Set sauce aside. Add steak, onion, pepper and whole garlic coves to skewer in alternating pattern (should be 5-6 pieces of food per skewer). Arrange completed skewers on flat baking pan and coat with chimichurri sauce. Bake for approximately 30
