  • 2 Medium potatoes, grated (2 Cups)
  • 1 Tablespoon chopped Onion
  • 1 Tablespoon snipped fresh parsley
  • 3 eggs, lightly beaten
  • 1 Tablespoon all-purpose flour
  • 1/2 teaspoon salt,
  • ground black pepper to taste
  • 2 teaspoons vegetable oil



Step 1

Grate potatoes and squeeze to remove extra moisture. In classic 2-quart batter bowl. combine all ingredients except oil' mix well. Heat 1 teas. oil in griddle until hot. Pour 1/4 cup potato mixture onto griddle, spreading evenly.(fry between Lo-med. heat). When one side is golden, turn and continue cooking on the other side. Repeat with remaining batter. Serve with maple syrup or applesauce.
