Red Beans and Rice

Ingredients

  • 1 lb dried kidney beans
  • 2 qts cold water
  • 1 chopped yellow onion
  • 3/4 cup chopped green pepper
  • 1 cup minced smoked ham (Rocky uses more)
  • 2 tsp salt
  • 1/4 tsp cayenne pepper
  • 3 TBSP chopped green onion tops
  • 1 1/2 TBSP dried parsley flakes
  • 1 1/2 Cup smoked sausage (more if you want)
  • 1 1/2 cup uncooked rice
  • 2 TBSP black pepper
  • Recipe of rice

Preparation

Step 1

Rinse beans and place in a very large kettle or crock pat - add water, cover and soak overnight

Next day: add onions, green peppers, ham, salt, cayenne and black pepper to the beans in their soaking water - bring to boil over high heat - lower heat so that the liquid ripples - cover and simmer 2.5 hours - uncover, stir well, turn heat to lowest point and cook uncovered about 3 hours longer, stirring occasionally until beans are soft and mixture is about the consistency of chili.
Stir in onion tops and parsley - cook 10-15 minutes stirring often
Cook rice according to directions
