Ingredients
- For icing:
- 6 Cups flour
- 1 Cup white sugar
- 1 Cup shortening (Crisco)
- 4 Large eggs
- 1 Cup Orange Juice
- 1 tsp lemon extract
- 1 tsp orange extract
- 1/2 tsp baking Soda
- 6 tsp baking Powder
- Powdered sugar a little milk and a little vanilla
Preparation
Step 1
Mix 1 cup sugar, 1 cup shortening, 4 large eggs together. Beat until fluffy in mixer. Add 1 cup orange juice, 1 tsp lemon extract, 1 tsp orange extract and ½ tsp baking SODA. Mix together.
In separate bowl, sift together 6 cups of flour, and 6 tsp baking POWDER. Add the dry ingredients to the shortening mixture a little at a time. Once combined, the dough will be soft. Refrigerate for a couple of hours to make easier to handle.
When ready, lightly grease cookie sheet. Take about a tablespoon and either roll into a ball and put on cookie sheet or you can roll into a 3” rope and twist around your finger to make a knot. I could never figure this out and Grandma Ann used to just drop them off the spoon to make these so I always just made little balls. Bake at 400 degrees for about 10 minutes. NOTE, watch these too, mom ALWAYS said I cooked them too much and made them dry. I would wait until the bottom was a light golden but mom said that was even too much. Let cool completely then frost.
Frosting
Powdered sugar a little milk and a little vanilla. This gets tricky. Start with a cup of powdered sugar and just add dabs of milk and vanilla because at first it is too dry then all of the sudden it is too wet and you have to add more powder. I used to make separate bowls and use food coloring to make red and green colors.
