  • 1 cup sugar
  • 2 teaspoon lemon zest, or a bit more if you wish
  • 1 cups freshly squeezed lemon juice, from approximately 5 lemons
  • 3 tablespoons butter
  • 3 eggs, slightly beaten

Step 1

Mix sugar, lemon juice and zest in a 1 1/2 quart saucepan. Stir in butter and eggs. Cook, over medium heat, stirring constantly until mixture thickens and coats the back of a spoon, around 8 minutes (do not boil. Immediately strain and turn into a container. Chill. Can keep for 2 months.
