- 150 g. Egg whites 3 days old
- 63 g. Sugar
- 150 g. Almond Flour
- 313 g. Organic Powdered Sugar
- 1 tsp. Cream of Tartar
Grind in food processor, almond flour and powdered sugar to blend well. If making chocolate, add cocoa powder at this time.
Whip egg whites and granulated sugar and powdered food coloring of choice if using, in an electric mixer fitted with a wire whisk until shiny and marshmallowy, about 10 minutes.
Add 1/2 of almond mixture to egg white mixture using bowl scraper, then mix in the rest and fold in with bowl scraper for approximately 5 minutes.
Pipe mixture using a size 5 or 7 pastry tip onto parchment baking sheets and let stand at room temperature for 15 minutes to develop a crust.
Bake at 350 degrees for 8 to 12 minutes depending on the size of the cookies. Let cool completely, before removing from parchment paper and then fill with desired filling to make sandwiches.
