Cheesy Bacon and Broccoli Strata

Ingredients

  • 2 teaspoons butter
  • 1/4 cup chopped red bell pepper
  • 1/2 cup Green Giant Valley Fresh Steamers frozen broccoli cuts, thawed
  • 2 frozen soft white dinner rolls (from 12.4 oz bag)
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon onion salt
  • 1/8 teaspoon pepper
  • 3 slices Canadian bacon, chopped
  • 1/2 cup shredded sharp Cheddar cheese

Step 1

In an 8-inch skillet, melt butter over medium-high heat. Cook bell pepper and broccoli in butter 1 to 2 minutes or until crisp-tender. Spray 1-quart casserole with cooking spray. Cut each roll into ½-inch cubes. In large bowl, beat milk, eggs, mustard, onion salt and pepper with wire whisk; stir in broccoli mixture, bread cubes, bacon and cheese. Pour into casserole. Cover; refrigerate at least 4 hours but no longer than 8 hours. Heat oven to 350°F. Bake uncovered 45 to 50 minutes or until set. Cool 10 minutes before serving.

Variations: omit the Canadian bacon for a veggie version, and try pepper Jack cheese to spice it up.
