Orange Crispy Tofu

Ingredients
- 14 oz extra firm tofu
- 1 c orange juice
- Peel from 1/4 orange cut into 1/4 inch strips
- 2 tbsp agave
- 1 tbsp soy sauce
- 1 tsp grated ginger
- 1 garlic clove, minced
- 1/4 tsp coriander
- Canola for frying
- 1/4 c cornstarch
- 1.5 tsp sea salt
- 2 tbsp chopped cilantro
- 2 c cooked rice

Preparation
Step 1
Press tofu and cut into ½ inch cubes. Set aside.
Small bowl: mix OJ and peel, agave, soy sauce ginger, garlic, coriander.
Large skillet: Fill with ½ inch oil and heat over med-high heat.
Whisk cornstarch and salt in small bowl. Dredge tofu in mixture.
Fry tofu in oil until golden crisp. Flip and fry each side. Drain on paper towels.
Large skillet over med-high heat: add tofu and OJ mixture. Cook until sauce bubbles down to a thick syrup.
Turn off heat and mix in cilantro.
Serve over rice
