- 1 SMASHED GARLIC CLOVE
- SALT
- 2 POUNDS TOMATOES, CUT INTO 1 INCH PIECES
- 1 SMALL RED ONION, THINLY SLICED
- 1/4 CUP RED WINE VINEGAR
- 3/4 CUP OLIVE OIL
- PEPPER
- COUNTRY BREAD SLICED 1/2 INCH THICK
- 2 BUNCHES ARUGULA
- 5 OUNCES RICOTTA SALATA

Step 1
MIX GARLIC, SALT, TOMATOES, ONION, VINEGAR AND 3/4 CUP OF EVOO. LET STAND FOR 1 TO 2 HOURS
BRUSH BREAD WITH EVOO AND GRILL UNTIL TOASTED AND LIGHTLY CHARRED IN SPOTS. 1 MINUTES PER SIDE. LET COOL, CUT INTO 1/2 UNCH CUBES.
ADD BREAD AND ARUGULA TO THE TOMATOES ALONG WITH THE CHEESE AND TOSS. SERVE RIGHT AWAY
