CORN DOGS

Ingredients

  • 2 cups flour
  • 3/4 cup corn meal
  • 1/2 cup sugar
  • 1-3/4 teaspoon salt
  • 1 teaspoon baking soda
  • 1-3/4 cups fat free milk
  • 2 egg yolks slightly beaten
  • 10 hot dogs
  • 5 pairs chopsticks

Preparation

Step 1

Preheat oil in deep fryer to 375 degrees. Combine flour, corn meal, sugar, salt and baking soda in large bowl. Combine milk and egg yolks add to dry ingredients and mix with electric mixer until batter is smooth. Dry off hot dogs with paper towel. Jab thin end of a single chopstick about halfway into the end of each hot dog. Roll hot dog in batter until entirely covered with batter. Hold hot dog up by stick and let some batter drip off. Quickly submerge hot dog in oil and spin it slowly so that coating cooks evenly. After about 20 seconds, you can use lid or weight on stick to keep hot dog fully immersed in oil. Cook for 5-6 minutes or until coating is dark brown. Turn them once or twice as they cook. Drain on paper towels while cooling, and repeat with remaining hot dogs.
