Beef and Cheesy Macaroni Casserole

Ingredients

  • 8 oz. elbow macaroni, uncooked
  • salt
  • 1/4 cup chopped onion
  • 1 medium green pepper, diced
  • 1 clove garlic, minced
  • 1/4 cup butter
  • 1/2 tsp. pepper
  • 1 lb. ground beef
  • 1 can (14.5oz) stewed tomatoes
  • 2 cups shredded cheddar cheese

Step 1

Prepare macaroni in boiling salt water according to package directions.

In a large saucepan, combine salt, onion, green pepper, garlic, butter, pepper, ground beef and stewed tomatoes. Cook slowly for 20 minutes; stir in 1 1/2 cups cheddar cheese. Spoon about 1/2 the macaroni into a buttered 2 qt. casserole. Top with cooked meat mixture then remaining macaroni and reserved cheese.

Bake at 350 for 30 minutes, uncovered
