Beef & Gorgonzola Pizza

Ingredients
- 1/2 Med. Red Onion, cut into thin slivers
- 2 Tbsp. Olive Oil
- 1 12-in. Italian Bread Shell ( such as Boboli )
- 8 oz. Cooked Roast Beef, thinly sliced
- 1 Sm. Sweet Red Pepper, seeded & chopped
- 4 oz. ( 1 C. ) Crumbled Gorgonzola Cheese
- 1/4 tsp. Pizza Seasoning

Step 1
Position rack in the centre of the oven. Preheat oven to 425. In a lg. skillet, cook onion in 1 tbsp. of the oil over med-high heat for 3-5 min. or till onion is just tender. Meanwhile, place bread shell on a lg. baking sheet; brush with remaining 1 tbsp. of the olive oil. Bake for 5 min. Change oven setting to broil. Meanwhile, lay the beef on a cutting board, stacking the slices if necessary. Slice beef crosswise into strips. Top partially baked bread shell with beef, sweet pepper, cooked onion, Gorgonzola cheese & pizza seasoning. Broil pizza for 4-5 min. or till toppings are heated through & crust is lightly browned. Cut in wedges & serve.
