Chicken and Peppers

Super simple using leftover chicken.

Ingredients

  • 2 T. coconut oil
  • 1/2 of a red onion sliced
  • 3 cloves garlic, minced
  • 1 red pepper, seeded and sliced
  • 1 green pepper, seeded and sliced
  • 1 yellow pepper, seeded and sliced
  • 1 orange pepper, seeded and sliced
  • salt and pepper to taste
  • 1 T. Bombay Veggie
  • 3 roma tomatoes, sliced
  • 1/4 c. low sodium chicken broth
  • 2 c. shredded chicken breast (you can use leftover)

Preparation

Step 1

Heat oil over medium high heat. Add onion and garlic and cook for a minute. Add peppers and seasoning and continue to cook until pepper start to soften (about 5 minutes). Add tomatoes, chicken, and broth and cook for another 5 minutes.
