Pasta with Lemon & Garlic

  • 1 tsp Olive Oil
  • 2 Garlic Cloves- minced
  • 1/2 C. Dry White Wine
  • 1/4 C. Fresh Squeeze Lemon Juice
  • 1 C. Tomato - chopped
  • 4 oz Dried Spinach Angel Hair Pasta
  • 4 oz. Dried Semolina Angel Hair Pasta
  • 1/4 C. Fresh Basil-chopped
  • 2 TBSP fresh grated Parmesan Cheese
  • Fresh Ground Pepper

Step 1

Bring a large pot of water to a boil, maintain the boil. Put Olive Oil & Garlic in a saute pan & cook over medium heat until garlic starts to turn brown. Remove from heat, add the wine & return pan to the heat. Cook for another 1 to 2 minutes, until the wine has been reduced by half. Stir in the lemon juice & tomato. Remove the pan from the heat. Place the pasta into the boiling water & cook until done-approx 30 seconds to 1 minute. Drain pasta & put in a warm serving bowl, add basil, cheese & tomato mixure. Toss & serve immediately.
