Red Snapper with Feta

Ingredients

  • 2 Snapper fillets
  • 6 ounce pack Feta cheese
  • 2 tomatoes chopped
  • 1 tablespoon capers
  • 2 tablespoons olive oil
  • 1 cup chopped kalamata olives
  • 1 teaspoon garlic chopped
  • Few leaves of fresh basil and oregano chopped

Preparation

Step 1

Preheat oven to 350 degrees. Place fillets in a cast-iron skillet with a splash of olive oil. Lightly salt and pepper the fillets. Mix everything except the feta in a bowl with a splash of olive oil. Top everything on the fillets, then finish with feta crumbles over the fillets and mixture. Place in oven for 18 to 20 minutes until feta is golden brown and fish is done. Serve with salad and wilted spinach.
