Elaine's Icing for Red Velvet Cake

Makes enough frosting for a double layer cake

Ingredients

  • 1 1/2 c milk
  • 6 Tbsp flour
  • 1 1/2 c butter (3 sticks) softened
  • 1 1/2 c sugar
  • 1 1/2 tsp vanilla

Preparation

Step 1

Gradually add milk to flour to make a smooth paste. Cook on medium heat on range to thicker-than-pudding consistency, stirring to prevent lumping. Remove from heat and stir constantly until cool (chill in fridge for a few minutes). Cream butter, sugar and vanilla until fluffy. Add cooled flour/milk mixture and beat on medium speed with mixer for about 10 minutes. This icing keeps well in a covered container in the fridge.
