Preparation

Step 1

Use a large pot, boil chicken (4-6 breasts or large pieces) in approximately 5 cups water. Keep the skin and bones on the chicken for added flavor. Keep the lid on the pot so the water does not evaporate.

Boil slowly for at least 45 minutes while frequently skimming "junk" off the top with a large spoon.

Take cooked chicken out of the water, allow time to cool and cut up chicken in large pieces. Put the chicken back in the pot.

Add 2-3 cans of chicken broth.
Add 1 large or 2 small onions chopped in very small pieces.
Add 2-3 cups of cut up fresh carrots.
Add 2-3 cups of cut up fresh celery.
Add 2-3 tablespoons of parsley.
Add a dash of garlic powder.
Add lots of pepper.
Let this boil slowly for at least 1 hour. Stir frequently, but keep lid on.

To make dumplings take 2-3 cups of flour and mix with 1 tablespoon of fast acting baking powder and 1 teaspoon of salt.
Add water slowly to dry dumpling mixture until reaches proper consistency.
Roll out dough on floured countertop.
Cut dumplings in 2x2 inch squares. Add dumplings to the hot soup mixture one at a time to prevent sticking together. Boil dumplings for 15-20 minutes. Enjoy!
