These wings can also be baked in a 350 degree oven for 30 - 45 minutes (depends on how big the wings are) a plus for when you don't want to deep fry at home. Obviously they won't be crispy but you also won't have to deal with a grease spattered kitchen

Ingredients

  • 15 chicken wings, tips discarded (if desired I like to leave them on) separated at the joint to make 30 pieces
  • 6 tbls of cajun style hot sauce like Frank's or Crystal
  • 4 tbls butter
  • 1 tbl white vinegar
  • 1/8 tsp celery seed
  • 1/4 tsp cayenne
  • 1/8 tsp garlic salt
  • dash of freshly ground black pepper
  • 1/4 tsp Worcestershire Sauce
  • 1 tsp Tabasco sauce (that why you need the second type of hot sauce, just using Tabasco doesn't give it the full flavor)
  • Buffalo Wing Blue Cheese dressing (recipe on Key Ingredient)
  • Dino BBQ sauce (from the Dino BBQ in update NY recipe on Key Ingredient)

Preparation

Step 1

1) Mix all the sauce ingredients in a small sauce pan over low heat until the butter is completely melted stirring occasionally.
Heat oil in a large heavy pot to 375 (if your going to fry the wings). Heat the oven to 350 degrees
2) Fry the wings in batches for 10 to 12 minutes and transfer to paper towels to drain or bake in the 350 degree oven for 30 - 45 minute until almost done. Remove from the oven but don't turn the over off
3) Place all the wings into a large bowl, pour in the sauce and shake or stir until they are completely covered in the sauce.
4) If you're facing a horde of starving people you can eat the wings now but they'll be more crispy (or in the case of baked wings with a less wet sauce) if baked on a rack over a pan for 10 more minutes
