This is a Creamy, Spicy Soup that is very flavorful and hearty. The accent of Cilantro and Pepper Jack Cheese put a little zip in this Soup recipe!

Spicy Southwestern Chicken Soup Recipe 1 Picture

Ingredients

  • 1/2 Cup Celery, diced
  • 1/2 Cup Onion, diced
  • 1 Cup Carrots, shredded
  • 1 Cup Wild Rice, cooked
  • 1 1/2 Cups Cooked Chicken, cut into bite size pieces (I use Rotisserie Chicken)
  • 1 Cup Pepper Jack Cheese, shredded
  • 1/3 Cup Heavy Cream
  • 1 Cup Chicken Broth
  • 1 Can Cream of Chicken Soup (10 3/4 oz.)
  • 3 Tablespoons Cilantro, chopped
  • 2 Tablespoons McCormick Southwest Sweet and Smokey Spice Blend

Preparation

Step 1

1. Saute Celery, Onion and Carrots in 1 tablespoon of oil in a large saucepan until soft

2. Add the remaining ingredients EXCEPT the Cream and Cilantro

3. Bring the Soup to a boil stirring constantly then reduce heat to low

4. Now add the Cream and Cilantro and simmer the Soup for about 15 minutes, stirring often



Serve this soup with tortilla chips or a rustic bread and you have a great meal!
