Ingredients
- 2/3 cup firmly packed pie crust mix or 1 stick flaky pie crust sticks, crumbled
- 1/4 cup brown sugar, packed
- 1 egg
- 1 cup grated or flaked coconut
- 1/2 cup brown sugar, packed
- 1 tbsp flour
- 1/8 tsp salt
- 1/2 tsp vanilla
- 6 maraschino cherries, chopped
- 1/2 cup sifted powdered sugar
- 1 tbsp butter or margarine, melted
- 1 1/4 tsp water
- 1 tsp lemon extract
Preparation
Step 1
1. To make crust, combine pie crust mix and brown sugar. Mix well. Press firmly into ungreased 8" square pan. Bake at 350F for 5 mins.
2. To prepare filling, in a small mixing bowl, beat egg. Stir in coconut, brown sugar, flour, salt, vanilla and cherries; mix well. Spread over baked crust. Return to oven and bake for 15-20 mins.
3. To make glaze, In a small mixing bowl, combine all ingredients; stir until smooth. Spread glaze on warm bars. Cool; cut into bars.
