Energy Surprise Bars

Ingredients

  • Icing:
  • 1 cup rolled oats
  • 1 cup finely ground almonds
  • 3/4 cup finely ground flaxseed
  • 2 cup raw sugar or brown sugar
  • 2 cup crisp brown rice cereal (health food store)
  • 3/4 cup melted butter
  • 1 1/2 cup peanut butter, unsweetened
  • 1 Tbsp. vanilla
  • 1 1/2 cups chocolate chips
  • 2 Tbsp. butter

Preparation

Step 1

Mix above ingredients in a large bowl until well blended. If mixture is too wet, add more rolled oats. Press into a greased 9x13 pan.

Icing:
Melt together and spread over bars. Place in freezer one hour before serving. Keep cold. Great for a healthy snack.
