Toasted Almond Ice Cream

Ingredients

  • 1/3 cup sugar
  • 4 egg yolks
  • 1 cup milk
  • 1 tsp vanilla
  • 1 cup toasted sliced almonds

Preparation

Step 1

1. Heat the milk slowly to a boil with the almonds.
2. In a mixing bowl, whisk together the sugar, vanilla and the egg yolk.
3. Temper the milk into the egg mixture.
4. Place the bowl over the pot of boiling water and stir with a wooden spoon until the mixture coats the spoon. Do not let it boil or cook onto the sides of the bowl.
5. Once thickened, strain the sauce through a fine seive.
6. Put the sauce in a bowl over ice to cool the sauce quickly. Continue stirring with the spoon to aid in the cooling-down process.
7. Put into an ice cream machine.
