Ingredients

  • 1/2 cup raisins
  • 3/4 cup flour
  • 1/2 cup oat bran
  • 1/2 cup brown sugar
  • 1/4 cup wheat germ
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/2 tsp. baking soda
  • 1/8 tsp. allspice
  • 1/3 cup banana
  • 1/4 cup skim milk
  • 2 egg whites
  • 2 Tbsp. oil (r 1/2 cup applesauce)
  • 1/2 tsp. vanilla
  • 1/2 cup shredded carrots
  • 1/2 cup walnuts, chopped
  • 1/4 cup oatmeal
  • 1 whole zucchini, grated

Preparation

Step 1

Pour into muffin tins. Bake at 400 degrees for 18-20 minutes.
