Ingredients
- 3 T olive oil
- 1 c each chopped onion, celery, carrots
- 1 T minced garlic
- 12 oz sliced smoked sausage
- 3 c canned cannellini beans, drained
- 3 c canned diced tomatoes, drained
- 1 bay leaf
- 2 sprigs fresh thyme
- 1/2 t salt
- 1/4 t pepper
- 1/2 c panko crumbs
- 2 t olive oil
- salt and pepper
Preparation
Step 1
In large pot, heat olive oil over medium heat, add onions, celery, carrots and garlic. Cook until they begin to soften.
Add sausage and cook for about 3 more minutes.
Add beans and tomatoes, bay leaf, thyme, salt and pepper.
Cover and simmer over medium heat until vegetables are tender, about 20 minutes.
In a small skillet, toast panko with olive oil and salt and pepper over medium low heat until golden, about 4 minutes; sprinkle over cassoulet.
