Ingredients
- 1 eggplant
- rice flour
- 8 eggs
- grated cheese
- vegetable oil
- breadcrumbs (optional)
- tomato sauce
- garlic
- olive oil
- italian seasoning
- garlic powder

Preparation
Step 1
Peel eggplant and slice in circles, lay on paper towels sprinkle with sea salt cover again with paper towels and put weighted cutting board on top to get water out of eggplant
mix eggs and cheese together
dredge eggplant in rice flour then egg mixture and then breadcrumbs
fry in olive oil put on paper towels to drain
make sauce: saute garlic in oil until garlic is brown, then add tomato sauce, italian seasoning, garlic powder to taste- sauce simmers for 1/2 hours
layer eggplant and sauce like lasagna and cook in oven at 375 for 30 minutes
