Salsa

Ingredients

  • 16 c peeled and chopped tomatoes
  • 2 1/2 c chopped onion
  • 1/4 c pickling salt
  • 2 green peppers
  • 2 yellow peppers
  • 1 red pepper
  • 4 jalapeno peppers
  • 3 cloves garlic
  • 1 1/3 c vinegar
  • 1/4 tsp cayenne

Preparation

Step 1

Par boil tomatoes 3-4 minutes to peel
Cut tomatoes into 8ths
Chop onions and mix with tomatoes
Pour pickling salt over veggies and marinate overnight

Drain off juice and put into large saucepan.
Add cayenne, vinegar and garlic - boil 45 minutes.

Add chopped peppers

Pour into sterilized jars.
