Banana Nut Muffins

  • 2 C flour
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 4 overripe bananas
  • 1 C brown sugar
  • 3/4 C butter, melted and cooled
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 C pecans, chopped



Step 1

Preheat oven to 375. Lightly butter muffin pans
In large bowl, combine flour, baking soda and salt; set aside. Mash 2 bananas with fork in a small bowl. With electric mixer, whip remaining bananas and sugar together for 3 minutes. Add melted butter, eggs and vanilla; beat well. Mix in dry ingredients til just incorporated. Fold in nuts and mashed bananas. Spoon batter into muffin tins (fill about halfway
Bake until a toothpick comes out clean, 18 to 20 minutes. Let cool for a few minutes.
