Black Bean and Mango Chicken Salad

  • 1 can (16oz) black beans, drained, rinsed
  • 1 pkg. (10oz) frozen corn, thawed
  • 1 cup chopped ripe mango (I use 2 mangos)
  • 1/2 pound boneless skinless chicken breasts, grilled, cut up (I use 4 breasts)
  • 1/2 cup chopped red pepper (1 red pepper)
  • 1/3 cup chopped fresh cilantro (1 bunch)
  • 1/3 cup chopped red onion (1/2 red onion)
  • 1/4 cup lime juice
  • 1 envelope Good Seasons Italian Salad Dressing mix (2 envelopes)



Step 1

Toss all ingredients in large bowl. Refrigerate

Serve with baked tortilla hips, if desired.
