Ingredients

  • 1/3 cup pepitas (shelled pumpkin seeds)
  • 1/4 cup shelled sunflower seeds
  • Cooking spray
  • 2/3 cup pure maple syrup
  • 1/3 cup honey
  • 1/4 cup unsweetened cranberry juice
  • 1 1/2 tsp ground cinnamon
  • 2 cups old-fashioned rolled oats
  • 1/2 cup roasted, salted almonds
  • 1 cup unsweetened dried cranberries

Step 1

Heat oven to 350 degrees. Spread the pepitas and sunflower seeds on a rimmed baking sheet. Bake until lightly toasted, 8 to 10 minutes. Set aside to cool.

Reduce the oven temperature to 325 degrees. Spray baking sheet with cooking spray. In a bowl whisk together the maple syrup, honey, cranberry juice and cinnamon. In another bowl mix together the oats, almonds, pepitas, sunflower seeds and salt. Pour the maple mixture onto the prepared baking sheet and bake for 20 minutes. Remove pan from oven and stir in the cranberries; continue baking until granola is brown, 10 to 15 minutes. Cool completely before serving or storing.
