Ingredients
- 3 egg yolks
- 1 1/2 c. flour
- 1/2 tsp. baking soda
- 1 1/2 tsp. salt
- 2 c. buttermilk
- 4 large yellow onions, sliced and separated into rings
- Oil for deep frying
Preparation
Step 1
Combine egg yolks, flour, soda, salt and beat with a large spoon.

Pour in buttermilk slowly, beating until forms a fairly smooth paste.

Heat oil, 3" deep, to 375°.

Drop rings into batter and fry 4-5 minutes until lightly browned.

Put on paper towels.

When all onion rings are done, fry again in hot oil to heat through and crisp them, 1-2 minutes.

Drain on paper towels, salt and serve.
