Linzer Tarts

Bakery Style cookie that is lite and easy.

Ingredients

  • 1 cup unsalted butter
  • 1 cup sugar
  • 2 eggs
  • 1/2 tsp almond extract
  • 2 1/2 cups flour
  • 2 tsp baking powder
  • Raspberry preserves(jam)
  • Powdered sugar for dusting.

Preparation

Step 1

1. Preheat oven to 375* degrees.In large mixing bowl combine butter, sugar, almond extract and eggs. Mix well together until light and fluffy.
2. Combine flour and baking powder. Mix thoroughly.
3. Remove dough and place onto wax paper- dough is going to be very wet and sticky. Try to form dough into rectangular log and cover with wax paper- refrigerate overnight. Dough can be frozen for up to 3 months.
4. On floured surface- cut 1/6 of dough and roll out to 1/4 inch thick. Take doughnut hole cookie cutter and cut dough- even amounts of tops(with hole in the middle) and bottoms.
5. Place in preheated oven and bake for 10-12 minutes, until bottom of cookie is lightly brown. Remove cookies and place on cookie rack and cool thoroughly.
6. Take tops(with holes) and place on piece of wax paper. Take sifter and put powdered sugar in and put over tops. Cover thoroughly. Take bottoms and place approximately one tablespoon of raspberry jam and spread evenly. Place powdered top over jammed bottom and place on cookie plate- ENJOY !!!
