Ingredients

  • 12 oz. bacon
  • 12 oz. baby greens
  • 2 small Granny Smith apples, peeled & chopped
  • 3/4 c. toasted walnuts, coarsely chopped
  • 3/4 c. diced cranberries
  • 8 oz. crumbled feta or other goat cheese
  • 1 orange
  • 3 T. cider vinegar
  • 2 T. maple syrup
  • 2.5 t. Dijon
  • salt & pepper
  • 2/3 c. olive oil

Step 1

Cook bacon, let cool & chop into large pieces.
In large serving bowl. toss greens with apples, walnuts, cranberries & cheese.
Grate 1 t. orange peel & squeeze 2 T. juice into small bowl. Whisk in vinegar, maple syrup, mustard, 1.5 t. salt & .5 t. pepper. While whisking slowly drizzle in oil .
Add chopped bacon to greens & dress with just enough dressing to moisten.
