- 12 oz. bacon
- 12 oz. baby greens
- 2 small Granny Smith apples, peeled & chopped
- 3/4 c. toasted walnuts, coarsely chopped
- 3/4 c. diced cranberries
- 8 oz. crumbled feta or other goat cheese
- 1 orange
- 3 T. cider vinegar
- 2 T. maple syrup
- 2.5 t. Dijon
- salt & pepper
- 2/3 c. olive oil

Cook bacon, let cool & chop into large pieces.
In large serving bowl. toss greens with apples, walnuts, cranberries & cheese.
Grate 1 t. orange peel & squeeze 2 T. juice into small bowl. Whisk in vinegar, maple syrup, mustard, 1.5 t. salt & .5 t. pepper. While whisking slowly drizzle in oil .
Add chopped bacon to greens & dress with just enough dressing to moisten.
