Chicken Salad

Ingredients
- Chunk chicken 12oz/1.5 cups
- {you can bake your own chicken breasts, but I often 'cheat' with canned}
- 1/3 cup mayonnaise
- Juice of 1/4 of a lemon
- 5 sprigs of parsley leaves {snipped from stalks & minced fine}
- 1/2 tsp dried basil
- 1/4 tsp salt {I prefer coarse sea salt}
- 1/2 cup grapes - halved {more or less to your liking}
- 1/4 cup dried cranberries
- 1/2 cup fuji or cripps pink apple {cut to walnut sized pieces}

Preparation
Step 1
Use fork to break chicken chunks into smaller pieces {but don't pulverize it to a pulp!} . Combine chicken, mayonnaise, lemon juice, basil and salt and incorporate evenly.
Add grapes, cranberries, apples, and parsley {and walnuts if desired}.
Gently mix all ingredients. You're done
