  • Chunk chicken 12oz/1.5 cups
  • {you can bake your own chicken breasts, but I often 'cheat' with canned}
  • 1/3 cup mayonnaise
  • Juice of 1/4 of a lemon
  • 5 sprigs of parsley leaves {snipped from stalks & minced fine}
  • 1/2 tsp dried basil
  • 1/4 tsp salt {I prefer coarse sea salt}
  • 1/2 cup grapes - halved {more or less to your liking}
  • 1/4 cup dried cranberries
  • 1/2 cup fuji or cripps pink apple {cut to walnut sized pieces}



Step 1

Use fork to break chicken chunks into smaller pieces {but don't pulverize it to a pulp!} . Combine chicken, mayonnaise, lemon juice, basil and salt and incorporate evenly.

Add grapes, cranberries, apples, and parsley {and walnuts if desired}.

Gently mix all ingredients. You're done
