Stuffed Mushrooms (Mom)

Christmas party favorite stuffed with cheese and and bacon.
Mom and you guys would make these every year for the Christmas party. Recently Brittany has been the only one home to help and it has become her job to make them with me. Brittany always remembers to save some to make without bacon for Stephanie-for vegetarian style.
Ingredients
- Mushrooms
- Bacon
- Olive oil
- Seasoned bread crumbs
- Salt/Pepper
- Garlic Salt
- Shredded mozzarella

This is all done by feel, no measurements….
Use whole mushrooms, whatever size you want to end up with. We use about 1 ½ to 2 inch size. Wipe mushrooms clean, do not rinse. Snap off stem and chop into bowl. Use a small spoon, if you have something even smaller than a teaspoon even better and scoop out a think layer from the bottom of the mushroom and add to stems to make room for stuffing. Set aside and keep doing them until done.
Make sure all the mushroom pieces are chopped up. Add some olive oil to moisten, seasoned bread crumbs, salt & pepper & garlic salt to taste. (have to keep trying it and adding more as needed). Add shredded mozzarella and either crumbled cooked crisp bacon or the ready made bacon pieces. (don’t use fake bacon bits). Mix together and test for moisture. It should be able to stick together so you can push it into the mushroom and it won’t fall out. If it is not moist enough add olive oil.
Place on a cookie sheet and bake in 350 degree oven. How long? I don’t know. I think it was about 20 to 30 minutes. You will see the mushrooms darken and become tender.
