Rustic Tomato-Bread Salad

Ingredients

  • 4 c. fresh tomatoes, diced (about 5 med. tomatoes)
  • 3/4 c. slivered red onion
  • 1/2 c. water
  • 1/3 c. olive oil
  • 1/3 c. white wine vinegar
  • 1 tsp. ground black pepper
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/2 c. shredded fresh basil
  • 6 c. day-old, dense, crusty bread, cut or torn into 1-inch cubes

Preparation

Step 1

Combine all ingredients, except bread, in a large bowl; let stand, allowing flavors to develop, about 10 minutes. Add bread; toss well to coat. If bread seems dry, sprinkle with an additional tablespoon or two of water. Will hold several hours at room temperature.
