Ingredients
- 1/2 cup oil
- 1 cup sugar
- 2 eggs
- 1 15 oz. can pumpkin puree
- 2 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp vanilla
- 3 tbl milk
- 1 cup butterscotch chips (tossed in 1 tsp flour, if preferred)
- 1/2 cup chopped nuts, optional
Preparation
Step 1
Beat oil and sugar together.
Add eggs and mix. Once the eggs are incorporated, add pumpkin puree.
Add remaining ingredients, adding butterscotch chips and nuts after everything has been well mixed.
Bake in a greased 9x5x3 loaf pan at 350 for one hour.
