Emeril's Cole Slaw

Ingredients

  • 3/4 c. mayonnaise
  • 1/4 Dijon mustard
  • 1/4 c. packed light brown sugar
  • 3 Tbsp. apple cider vinegar
  • 2 Tbsp. buttermilk
  • 4 tsp. celery seeds
  • 1 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/8 tsp. cayenne pepper
  • 3 c. shredded green cabbage (about 1/2 a head)
  • 3 c. shredded red cabbage (about 1/2 a head)
  • 1 green bell pepper, finely diced
  • 1 large carrot, peeled and shredded
  • 1/2 c. grated yellow onion
  • 1/4 minced fresh parsley

Preparation

Step 1

In a bowl, combine the mayonnaise, mustard, sugar, vinegar, buttermilk, celery seeds, salt, pepper and cayenne. Whisk well to dissolve sugar. In a large bowl, combine the remaining ingredients. Toss with the dressing until evenly coated. Adjust seasoning, to taste. Refrigerate, covered, and chill before serving.
