Bev's Chocolate Chip Cookies

Ingredients

  • 3/4 c. rolled oats
  • 1 c. whole wheat flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 c. butter, softened
  • 1/4 c. canola oil
  • 1/3 c. granulated sugar
  • 1/3 c. brown sugar
  • 1 large egg
  • 1 tsp. vanilla
  • 1 c. chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees. Coat 2 cookie sheets with cooking spray. Grind oats in a blender or food processor. Transfer to medium mixing bowl and stir in flour, baking soda, and salt. In a large bowl, beat butter with an electric mixer until fluffy. Add oil, granulated sugar, brown sugar, egg, and vanilla; beat until smooth and creamy. While mixer is running, add dry ingredients. Beat on low speed until just combined. Stir in chocolate chips. Drop dough by heaping teaspoonfuls onto cookie sheets, leaving at least 1" between cookies. Bake 1 sheet at a time, about 15 minutes, or until firm around the edges and golden on top. Cool on baking sheet for 2 minutes, then transfer to cooling racks until completely cooled.
