Ingredients
- 4 rounded Tbsp. cocoa
- 4 eggs
- 1 c. flour
- 1 tsp. vanilla
- 1-3/4 c. sugar
- 2 sticks margarine
- 1 c. chopped pecans
- 1/2 c. mini chocolate chips
Preparation
Step 1
Preheat oven to 325 degrees. Put muffin liners in muffin tins and spray with cooking spray. Melt margarine and cocoa together in a saucepan. Remove from heat and add vanilla. In a large bowl, combine flour and sugar. Stir in cocoa and butter mixture. In a separate bowl, lightly beat eggs. Add to batter, mixing well. Stir in nuts and chocolate chips. Fill muffin tins with batter. Bake 25-35 min. Makes 12 regular muffins, or 24 mini muffins.
