Ingredients
- 1-1/2 lb. ground beef
- 2 doz. corn tortillas
- 1 family-sized can cream of mushroom soup
- 2 cans Old El Paso green enchilada sauce
- 10 oz. pkg. longhorn cheddar cheese
- Water (fill mushroom soup can 1/2 to 3/4 full)
- 1 small can chopped green chilis (more if you like)
- Salt and pepper to taste (other seasonings can be added to taste)
- Oil for frying tortillas
Preparation
Step 1
Preheat oven to 350 degrees. Combine soup, enchilada sauce, and water in a large saucepan. Stir well, and bring up to a boil. Reduce heat and simmer 10 minutes, stirring often. Brown ground beef. Season. Heat oil in frying pan, and fry tortillas (for about 3 seconds each). Layer ingredients in a large baking dish, as follows: 1/3 of tortillas, 1/3 of sauce, 1/3 of meat, 1/3 of cheese. DO NOT put last 1/3 of cheese on top. This will be added later. Bake 30 minutes. Add last layer of cheese and bake 2 minutes more, until cheese melts.
