Ingredients
- 1/2 cup onion, chopped
- 1/2 cup celery, chopped (including some leaves)
- 1/4 cup butter
- 2 cups hot water
- 1 cup potato, diced
- 2 t chicken bouillon
- 1/4 cup flour
- 2 cups milk
- 1 can cream style corn
- 1 can regular corn, drained
- 1 jar pimiento, sliced and drained
- 1 t parsely
- 1/4 t black pepper
- 2 cups cheddar cheese

Preparation
Step 1
In saucepan over medium heat, saute onion and celery in butter for 3 minutes. Add water, potato and bouillon. Bring to a boil, cover and simmer for 10 minutes. Increase heat to medium-high. In small bowl, stir flour into 1 cup of the milk until smooth. Stir in potato mixture with remaining milk, both cans of corn, pimientos parsley and pepper. Stirring, bring to a boil and boil until slightly thickened. Remove from heat. Stir in cheese until melted. Serve.
