Sausage Hashbrown Casserole

  • 1 2lb bag of frozen hash browns, thawed out
  • 1 lb pork sausage
  • 1/2 onion, finely chopped
  • 8 eggs
  • 1/2 c. milk
  • 2 c. shredded cheddar cheese
  • 1 tsp salt
  • 1/4 tsp pepper

Step 1

Preheat oven to 375. Spray 9x13 pan with cooking spray. Saute' onions and brown sausage - drain excess grease. In medium bowl, whisk eggs, milk and 1 c. shredded cheese. In baking dish, spread thawed hash browns into bottom of dish. Make sure hashbrowns are thawed and pat dry with paper towel or it will make the casserole soggy. For added flavor, brown hash browns before layering in dish. Spread cooked sausage on top of hash brown layer. Pour egg mixture on top of sausage layer. Sprinkle remaining cheddar cheese on top. Bake for 30 minutes.
